Ritz Pie (Mock Apple)

INGREDIENTS:

FILLING:

2 cups water 1 cup sugar 2 tsp. cream of tartar 30 Ritz Crackers 1 Tbsp. lemon juice 1 tsp. ground cinnamon 1 ready-to-use refrigerated pie crust (9-inch)

TOPPING:

25 Ritz Crackers, crushed (about 1 cup) 1/3 cup packed brown sugar 1/2 tsp. ground cinnamon 1/3 cup butter or margarine, melted 2 cups whipped topping

INSTRUCTIONS:

Preheat oven to 400ºF. For the filling, mix water, sugar, and cream of tartar in a large saucepan. Bring to boil on medium-high heat. Add crackers; simmer on medium-low heat for five minutes, stirring occasionally. Line 9-inch pie plate with the crust as directed on package; fill with cracker mixture. Sprinkle with lemon juice and cinnamon. For the topping, combine all remaining ingredients except whipped topping; sprinkle overfilling. Bake for 15 minutes. Reduce oven temperature to 350°F and bake for 20 minutes or until golden brown. Cool. Garnish with whipped topping.

Prep time 20-25 minutes. Serves 6-8.
